Homemade Veggie Broth


Make your own broth (and a yummy-smelling kitchen too). 1) over time, store peels and scraps from veggies and herbs in a freezer bag,  2) every couple of weeks, or when the bag is full, fill a pot with water and add the veggies/herbs, 3) bring to a boil then simmer for 1-2 hours, 4) add salt and other spices to your taste. I often add tamari and a bit of tomato paste.  5) drain the broth and store in glass jars in the fridge or freezer or in ice cube trays in the freezer. Use anywhere you'd normally use broth! I use mine mostly for soups or for cooking quinoa or rice (instead of water). Enjoy!
