Colors of Summer for the Winter Blues

Although we had a beautiful snow fall here in Boston this morning, I am feeling the need for the colors of summer. So I decided to make my lunch extra colorful and varied today. I also decided to do mostly raw foods as I've been trying to incorporate more raw foods into my diet lately. I began by chopping and mixing purple cabbage, chick peas, grape tomatoes, and cilantro. I took this mixture and coated it with a dressing made from turmeric, ginger, balsamic vinegar, olive oil, red pepper, stone ground mustard, and tahini. I found these beautiful organic purple carrots at Whole Foods to dip in a bit of hummus, and I added starfruit and strawberries for a sweet treat. It's feeling a little more like summer already:)
