Clean-out-the-fridge tofu scramble.
This morning’s breakfast was a clean-out-the-refrigerator tofu scramble. I crumbled tofu and sautéed it with mushrooms, tomato, basil, red pepper, shallot, garlic, nutritional yeast, pinto beans, cayenne, turmeric, and tamari. I plated the tofu over sprouted flax toast with half an avocado and a dandy blend tonic. Trying to make meals that include a lot of ingredients from the fridge and freezer since we are moving next week!
