Gazpacho
With all the different varieties of delicious juicy tomatoes available right now, I was inspired to make a cool and light gazpacho. There are infinite ways you could make #gazpacho as it is simply a cold soup made out of raw veggies, generally with a tomato base. I used what I had on hand and topped it with a basil cream sauce.
Gazpacho:
5 organic heirloom or hot house tomatoes
2 garlic cloves
1/2 shallot
1/2 cucumber
Juice of half a lemon
S & P to taste
1 Tsp paprika
1/2 green chile
Few drops hot sauce
1 Tbsp sun-dried tomato paste
Blend in blender and serve.
Basil Cream Sauce
1 C cashews
1/2 C water
1 Tbsp fresh basil
1 Tsp lemon juice
Salt to taste
Blend in blender and serve.
